My daughter has been asking for cinnamon raisin bread. I couldn’t justify paying $7 for a loaf, so I decided to try making some. I like how your recipe has a lot less sugar than all the others I looked at, so I decided to try your recipe. I didn’t plan my baking adventure very well because after I started I realized I only had half a cup of whole wheat flour left! I ended up substituting ww flour for oat flour. I read that ww flour can be replaced with oat flour at a ratio of 1 cup : 1.25 cup (more oat flour since oat flour is not as dense as ww flour). I also added a bit of honey to the water/yeast mixture (roughly 3Tbsp) because I also read that yeast needs the gluten in flour to rise, and since oat flour has no gluten I thought I better feed the yeast with something else. The bread turned out beautifully; light and fluffy and so VERY delicious. Even my picky 8 year old son (who is convinced that he hates Raisins) kept asking for more!
